The Mason Jar Salad!!!!!!
So, I have LITERALLY been making these things NONE stop. I know what you're thinking. "Meaghan, there is NO difference between that and putting your salad in regular tupperware!?" WRONG. You see, the key to mason jar salads is that you put all of the wet stuff on the bottom. And you should have some wet stuff on the bottom! If you are trying to lose weight or get fit and think you'll just omit all forms of protein and eat endless vegetables all day, you do NOT need to do that. Start with a bit of salad dressing. Then add your protein (I like adding tuna or a sliced hardboiled egg...vegans, I will come up with something for you!) Then you can start adding your dryer ingredients like sunflower seeds and veggies. It's all about layering people!
The Benefit?
1. IT DOES NOT GET SOGGY, Stop packing your salad dressings or oils in a separate container and start dancing the mason jar jive (...sorry, I had to)! WHen you take it to school or work, dump it out on your plate and VOILA. The stuff on the BOTTOM (i.e dressing and chicken) becomes the stuff on TOP. Literally the most simple and GENIUS idea.
2. You can store these mason jars in your fridge for about three days. Are you that person that HATES to meal prep? Make three or four of these at once and your lunches are set for a good portion of your week. A total "grab-n-go." Who needs a drivethru anyways?!
Mexican Madness!
I like to introduce myself a bit in every blog post, so you should also know that I LOVE mexican food. The other night, I made ground turkey tacos. What you need:
1. Ezekiel or SMALL whole wheat wraps
2. Ground turkey/chicken and taco seasoning
3. Sliced onions and peppers (sauteed)
4. Avacado/Guacamole and Hot salsa
5. Veggies (lettuce, tomato)
** Yes, I omitted the cheese and sour cream. That's because I try to only have ONE healthy fat serving a day and decided I like guac more than cheese. Feel free to switch that around if you want**
At then end, I still had some ingredients left over... can you guess what I did?! CAN YOU? CAN YOU?! Okay I'll tell you!!!! Sheesh!.... I made a MASON JAR TACO SALAD :D Haha. And lunch the next day was JUST as good as dinner the night before. I sure do love eating clean. Here is the before and after of Mason Jar Madness!
