What you need:
2 eggs/egg whites
One small red pepper
Onion
One shiitake Mushroom
A handful of chopped celery
Fresh spinach
Chopped small tomato
(If you desire, a small amount of shredded low fat mozzarella cheese)
Sprinkle of Mrs. Dash
1. Heat up a small frying pan with a teaspoon of olive or coconut oil
2. Add all veggies (APART from spinach and tomatoes) and fry on medium heat until onions are translucent)
2. Add your eggs and reduce to lower heat. Stick a fork in the yolk if you're like me and don't like runny yolk :)
3. When egg is almost completely cooked, add your tomatoes, spinach and cheese. Better texture and taste all around.
4. Scarf.
Counts as one red and one green if you're on the 21 day fix! Add some fresh fruit to go on the side or whole grain toast :)
